Elderberry Syrup

3/4 cup elderberries
3 1/2 cups of water
2 Tbsp fresh or dried ginger root
1 tsp cinnamon powder
1/2 tsp whole cloves or clove powder
1 cup raw honey

Mix all ingredients except the honey (do not boil the honey!) in a saucepan.  Bring to a boil & simmer for 45 minutes (reduce volume by nearly half). Pour through a strainer to remove elderberries.  Cool to lukewarm & add honey.  Store in refrigerator in a 16 oz. jar.
