Lemon & Red Currant Loaf

1 c. yogurt

1/2 c. vegetable oil

3/4 c. sugar

3 eggs

1 1/2 c. flour

2 tsp. baking powder

1/4 tsp. salt

2 tsp. vanilla

1 c. red currants

zest of 2 lemons

Add sugar & lemon zest to a large bowl; rub together until fragrant.  Whisk in eggs, yogurt, and vanilla until the mixture is smooth.  Mix in flour, baking powder, and salt.  Add oil to the mixture and gently mix in currants at the very end.  Bake at 350F for 1 hour.  Cool before slicing.
