4 parsnips
10 carrots
4 bacon slices
1/4 cup maple syrup
2 tsp. dried thyme
Salt & pepper to taste
Directions
Quarter the parsnips, carrots, and uncooked bacon slices, then spread evenly on a cooking sheet. Drizzle with maple syrup and sprinkle with thyme, salt & pepper.
Roast in the oven at 450F for 40 minutes (cook 20 minutes, then flip veggies, cook for another 20).
