Potato Leek Soup
Ingredients
3 lg. leeks2 Tbsp. butter2 tsp. fresh thyme2 c. water2 c. broth2 lbs. chopped potatoes1 tsp. Marjoram¼ c. fresh parsleyTabasco sauce Salt & pepperDirections
Clean the leeks by cutting lengthwise, then chop & sauté in butter with thyme.
Add the chopped potatoes, broth & water let simmer for 20 minutes or until potatoes are cooked. Add marjoram, fresh parsley, tabasco & salt and pepper to taste.
Staff suggestion: try with chopped mild sausage!
