Potato Leek Soup

3 lg. leeks

2 Tbsp. butter

2 c. water

2 c. broth

2 lbs. potatoes

¼ c. fresh parsley

2 tsp. fresh thyme

Tabasco sauce

marjoram

salt

pepper

Clean the leeks by cutting lengthwise, then chop & sauté in butter or oil. Chop & add potatoes, broth & water, then simmer 20 min. Blend half the soup before adding the Tabasco & herbs. Garnish w/ chives & grated cheese.
