Rhubarb Apple Ginger Crisp
Ingredients
4-5 stalks of rhubarb, chopped into 1-inch pieces2 large apples, chopped into 1/2-inch pieces2 Tbsp ginger, freshly grated2 Tbsp sugar1 Tbsp lemon juice1 tsp ground cinnamonTopping:
1 cup flour3/4 cup sugar1/4 cup maple sugar (optional - substitute brown sugar)1 stick of butterDirections
Mix fruit, ginger, sugar & lemon juice together and spread in a 9x13 pan. Sprinkle cinnamon over the top of the mixture.
Whisk together the ingredients for the topping and crumble the topping over the fruit mixture.
Bake for 40 minutes at 375°F.
