4-5 stalks of rhubarb, chopped into 1-inch pieces
2 large apples, chopped into 1/2-inch pieces
2 Tbsp ginger, freshly grated
2 Tbsp sugar
1 Tbsp lemon juice
1 tsp ground cinnamon
Topping:
1 cup flour
3/4 cup sugar
1/4 cup maple sugar (optional - substitute brown sugar)
1 stick of butter
Directions
Mix fruit, ginger, sugar & lemon juice together and spread in a 9x13 pan. Sprinkle cinnamon over the top of the mixture.
Whisk together the ingredients for the topping and crumble the topping over the fruit mixture.
Bake for 40 minutes at 375°F.
