Rhubarb Apple Ginger Crisp

4-5 stalks of rhubarb, chopped into 1-inch pieces

2 large apples, chopped into 1/2-inch pieces

2 Tbsp ginger, freshly grated

2 Tbsp sugar

1 Tbsp lemon juice

1 tsp ground cinnamon

 

Topping:

1 cup flour

3/4 cup sugar

1/4 cup maple sugar (optional – substitute brown sugar)

1 stick of butter

 

Mix fruit, ginger, sugar & lemon juice together and spread in a 9×13 pan.  Sprinkle cinnamon over the top of the mixture.  Whisk together the ingredients for the topping and crumble the topping over the fruit mixture.  Bake 40 min. at 375F
