Roasted Beet Salad

Beets

Ingredients

1 bunch beets
¼ c. orange juice
½ c. crumbled blue cheese
½ c. walnuts
1 onion
½ lb. lettuce
1 pt. snap peas
½ c. grated turnips

Directions

Quarter small beets or slice large beets and place in a pan with orange juice. Roast in oven 1 hour at 400°F. Add beets, crumbled blue cheese, and walnuts to a tossed salad of your favorite seasonal veggies. Serve with a vinaigrette dressing.
