Stuffed Zucchini
Ingredients
1 extra lg. zucchini (or 2 reg.)3/4 lbs. ground beef1 small onion1 sweet pepper1 cup corn1 cup tomatoes1/4 c. hot peppers1 1/2 tsp. fresh oregano1/2 tsp. cumin1/4 c. bread crumbs1/2 c. cheeseDirections
Split zucchini in half & discard seeds. Scoop out remaining flesh. After browning meat with onion & pepper mix together with zucchini, corn, tomatoes & spices. Fill zucchini shells with mixture, top with bread crumbs & cheese. Bake for 45 minutes at 350°F.
