Stuffed Zucchini

1 extra lg. zucchini

3/4 lbs. ground beef / venison

1 sm. onion

1 sweet pepper

1 c. corn

1 c. tomatoes

1/4 c. hot peppers

1 1/2 tsp. fresh oregano

1/2 tsp. cumin

1/4 c. bread crumbs

1/2 c. cheese

Split zucchini in half & discard seeds. Scoop out remaining flesh. After browning meat w/ onion & pepper, mix together w/ zucchini, corn, tomatoes & spices. Fill zucchini shells with mixture & top with bread crumbs & cheese. Bake 45 min. at 350F.
