Roasted Beet Salad
Ingredients
1 bunch beets¼ c. orange juice½ c. crumbled blue cheese½ c. walnuts1 onion½ lb. lettuce1 pt. snap peas½ c. grated turnipsDirections
Quarter small beets or slice large beets and place in a pan with orange juice. Roast in oven 1 hour at 400°F. Add beets, crumbled blue cheese, and walnuts to a tossed salad of your favorite seasonal veggies. Serve with a vinaigrette dressing.
