Sesame Chicken Couscous Salad

Ingredients

1½ c. chicken broth
1 tsp. soy sauce
1 tsp. sesame oil or olive oil
1 c. uncooked couscous
1 onion
1½ c. sugar snap peas or snow peas
¾ c. broccoli florets
1 c. cooked chicken
¼ c. lemon juice
2 Tbsp. olive oil
2 tsp. soy sauce
¼ tsp. pepper
1 tsp. sesame oil
¼ c. slivered almonds
1 Tbsp. sesame seeds

Directions

Bring broth, soy sauce, & oil to a boil. Stir in uncooked couscous. Cover & let stand 5-8 mins; fluff w/ fork. Stir in onions, cover & refrigerate until chilled. Steam peas, broccoli until crisp-tender. Rinse in cold water & drain. Add cooked chicken to couscous with broccoli & peas.

Combine remaining ingredients with couscous mixture. Garnish with toasted nuts & seeds. Serve chilled or at room temperature.
