Sesame Chicken Couscous Salad
Ingredients
1½ c. chicken broth1 tsp. soy sauce1 tsp. sesame oil or olive oil1 c. uncooked couscous1 onion1½ c. sugar snap peas or snow peas¾ c. broccoli florets1 c. cooked chicken¼ c. lemon juice2 Tbsp. olive oil2 tsp. soy sauce¼ tsp. pepper1 tsp. sesame oil¼ c. slivered almonds1 Tbsp. sesame seedsDirections
Bring broth, soy sauce, & oil to a boil. Stir in uncooked couscous. Cover & let stand 5-8 mins; fluff w/ fork. Stir in onions, cover & refrigerate until chilled. Steam peas, broccoli until crisp-tender. Rinse in cold water & drain. Add cooked chicken to couscous with broccoli & peas.
Combine remaining ingredients with couscous mixture. Garnish with toasted nuts & seeds. Serve chilled or at room temperature.
